Cookies are one of the food products that popular with public. The raw material for making cookies is wheat flour, which still imported from abroad and year by number imports continues to increase. Utilization avocado seed flour will reduce use can also waste avocados. main factor in fulfilling quality a product be assessed based on appearance product, taste nutritional value product. This study aims analysed level preference (taste, aroma, texture, colour) through organoleptic tests. design this used an experimental using RAL (Completely Randomized Design) method two replications. Avocado substitution formulation 4 treatments, namely control (P1), 30% (P2), 50% (P3) 70% (P4). research location at State University Medan. subjects (untrained panellists) were 25 people. data test descriptively percentage respondents' acceptance each treatment determine effect treatment, Kruskal Wallis statistical analysis was used. results indicate best formula 50 percent obtained average 1.2 taste, 0.3 colour, 0.6 aroma total 2, 4. Based test, it known there significant difference perception seen texture (p = 0.000).
